Searing the Beef
Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles
Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling
Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Chop the strawberries into chunks. Place them in a medium saucepan on medium to medium high heat. As they start to cook they will soften and you can begin to mash with a wooden spoon or potato masher them to your desired consistency.

Once they strawberries are cooked to the desired consistency stir in the chia seeds and lemon juice. Cook another 2 minutes. The jam will begin to thicken. After a few minutes remove from stovetop. You can add in the optional maple syrup or sweetener of your choice. The jam is ready. You can serve it warm as a yummy treat over ice cream or keep it in your refrigerator for up to a week. You can also freeze it up to six months to enjoy the best of summer fruit later on. It's that easy and taste so good!

You can use any juicy summer fruit you have on hand. berries work great, but you could also use fresh peaches or nectarines. Feel free to play with what ever you have on hand. It is all about getting creative and playing in the kitchen.
