Searing the Beef

Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling

Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Prepare and chop all of the ingredients. Add all of the ingredients to the bowl of a food processor. If you do not have a food processor you can just leave the salsa chunky. The flavors are the same yummy tomato flavors of summer.

Once the ingredients are in the food processor pulse several times. Traditional salsa is not completely pureed. You can pulse until the salsa has the consistency you desire. Add sea salt to taste. For a bit more hot you can also add a bit of cayenne. This salsa will keep in the refrigerator for about 1 week.

3 Cups Roughly Chopped Tomatoes

1/3 Cup Chopped Red Onion

1/4 Cup Chopped Cilantro

1 TBL Chopped Jalapeno

1 Clove Garlic

1/2 lime Juiced

1 Tsp Cumin
