Almond Milk Chia Pudding: A Fiber-Rich Breakfast for Midlife Health

There’s something deeply comforting about simple foods that quietly do a lot of good for our bodies. This almond milk chia pudding has become one of my go-to staples—especially in midlife—because it’s easy to prepare, nourishing, and incredibly supportive of digestion, blood sugar balance, and hormone health.

During perimenopause and menopause, many women notice changes in digestion, energy, and how their bodies respond to food. Fiber becomes one of the most important—and often overlooked—nutrients during this transition. This simple chia pudding delivers a powerful fiber boost in a gentle, blood-sugar–supportive way.


Why Fiber Matters More in Menopause

As estrogen levels decline, we tend to see:

  • Slower digestion

  • Increased insulin resistance

  • Changes in the gut microbiome

  • Greater inflammation


Dietary fiber helps counter many of these shifts. It supports healthy elimination (which is essential for hormone detoxification), feeds beneficial gut bacteria, helps stabilize blood sugar, and promotes a longer-lasting sense of fullness.

In a medium-sized bowl or large jar combine chia seeds, almond milk, vanilla extract, and maple syrup. Stir thoroughly to ensure all seeds are well-coated.

Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and form a pudding-like texture.

Before serving, stir the pudding to eliminate any clumps.

Top each serving with an assortment of mixed nuts and fresh fruit of your choice. I love adding a some whole mild greek yogurt to increase my protein.

1 cup unsweetened almond milk

1 tsp vanilla extract

1 tsp maple syrup

Chia Pudding

1/4 cup mixed nuts (almonds, walnuts)

1/2 cup fresh fruit (berries, banana slices)

Optional toasted coconut or small amount of homemade granola
