Oat Flour
To make your own oat flour simply put your oats in a blender and blend until finely ground. It's that simple. I keep some on hand for baking throughout the week. I use glyphosate free oats from One Degree.

Whisk the cottage cheese, egg, vanilla, melted ghee and maple syrup together.

Add the oat flour, almond flour, baking powder, and salt. Whisk until combined.

Heat a non-toxic nonstick skillet over medium heat. Once the pan is heated add a bit of ghee or butter to the pan. Spoon the mixture into the pan for cakes. It will be thick so you will need to help spread it out. Cook until deliciously browned and flip.

The cheese will become yummy and caramelized. They almost taste like cheese cake for breakfast. Once the pancakes are done serve with toasted nuts, a side of bacon or sausage and fresh fruit that is in season. I hope you enjoy these cakes as much as I do. Let me know what you think.
